These Gluten-Free Italian Antipasto Skewers are an elegant, no-fork-required appetizer featuring creamy mozzarella pearls, silky prosciutto, sweet roasted red peppers, Castelvetrano olives, juicy cherry tomatoes, and fresh basil. Ingredients
  

  • 24 Mozzarella Pearls, well drained
  • 12 slices Prosciutto cut in half and gently folded
  • 24 Castelvetrano Olives pitted and well drained
  • 1 cup Roasted Red Peppers cut into bite-sized pieces
  • 24 Cherry Tomatoes
  • 24 Fresh Basil Leaves

Instructions
 

Prepare the components:

  • Drain mozzarella pearls, olives and roasted red peppers well. Pat dry if needed to prevent slipping on the skewers.
  • Wash, and lay out the fresh basil

Assemble the skewers: 

  • On each small skewer or cocktail pick, layer:
    • A mozzarella pearl
    • A folded piece of prosciutto
    • A piece of roasted red pepper
    • A Castelvetrano olive & Cherry Tomatoes
    • Finish with a fresh basil leaf
    (You can vary the order slightly for visual interest.)

Finish & serve

  • Arrange skewers neatly on a platter. Just before serving, finish with cracked black pepper and, if desired, a very light drizzle of olive oil and balsamic glaze.
